Green Goddess Salsa - Your Healthy Summer Sidekick

My Green Goddess Salsa is the healthy summer sidekick you never knew you needed. The combo might sound strange but trust me - you gotta try it! Broccoli, cucumber and avocado all blended together makes a craveable dip that eats like a lighter version of your favorite guacamole. Make it as your guilt-free weekend nosh or to bring to your next summer bbq. Either way, this recipe will be on repeat.

Green Goddess Salsa
makes about 3 cups

INGREDIENTS
1 head broccoli, broken into florets
1 cucumber, seeded (or half an English cuke)
1 jalapeno, seeds intact for heat or removed for less heat
1-2 cloves garlic
1 ripe avocado
½ bunch cilantro
Juice of 1 lime
1 tsp kosher salt, or to taste


DIRECTIONS
1. Blanch the broccoli in salted simmering water until al dente then shock in ice water to cool quickly and lock in the bright green color. Drain well.

2. Add the blanched broccoli, cucumber, jalapeno and garlic to a food processor.  Process until finely minced.

3. Add the avocado, cilantro, lime juice and salt.  Process until well combined.
